Coconut & Coriander Raita

INGREDIENTS:

1 X 14oz (400gm) can coconut cream

1/4 fresh coconut pieces or the equivalent in soaked desiccated coconut

1 cup coriander (100gm) - also called cilantro - finely chopped.keep some back for garnish

1 garlic clove 

1 green chilli

juice of 2 limes

salt and pepper to taste

METHOD:

Place all the ingredients into a blender  and blend until a fine pasty consistency is achieved. Adjust the seasoning and serve in a bowl garnished with remaining coriander.
